Faites-le correctement

  1. Add the bourbon, fresh lemon juice and honey syrup to a cocktail shaker.
  2. Add approximately 150 g ice.
  3. Shake firmly for 10–12 seconds until thoroughly chilled.
  4. Add approximately 100 g fresh ice to an Old Fashioned glass.
  5. Strain the cocktail over the fresh ice.
  6. Express a lemon twist over the drink and garnish.

Bourbon contributes vanilla, caramel, oak and spice, while fresh lemon cuts through the whiskey with clean acidity. Honey syrup connects the two, providing sweetness with considerably more flavour than a neutral sugar syrup.

It is also closely related to the Bee's Knees. Both combine spirit, lemon and honey, but the Bee's Knees uses gin while the Gold Rush uses bourbon.

The Gold Rush shows how much difference one ingredient can make. Structurally, it is very close to a Whiskey Sour: whiskey provides the base, lemon supplies acidity and sweetness brings the drink into balance. Instead of ordinary sugar syrup, however, the Gold Rush uses honey syrup. That change gives the cocktail greater depth, a softer sweetness and a richer texture. There is no need for egg white or cocktail foamer. A proper Gold Rush gets its texture naturally from the honey syrup and vigorous shaking.

Choose a good bourbon whiskey with enough character to remain present alongside lemon and honey. There is no need to use an exceptionally old or heavily oaked bourbon; excessive oak can dominate this relatively simple cocktail. Liquor.com

Use fresh lemon juice rather than bottled juice. The clean acidity is particularly important because it prevents the honey from making the drink feel too rich.

For the sweetener, use honey syrup rather than straight honey. Diluting honey into syrup allows it to combine properly with the cold ingredients during shaking instead of sticking inside the shaker.

The Gold Rush should taste rich but still refreshing. Honey should soften the bourbon and lemon rather than dominate them.

Keep the lemon freshly squeezed and measure the honey syrup carefully. Too much honey makes the cocktail heavy, while too little leaves the lemon overly sharp.

Dilution matters as well. Shake firmly with cold ice, then serve over fresh ice rather than using the partially melted shaking ice.

L'HISTOIRE DE L'AMERICANO

The Gold Rush was created at the influential Milk & Honey bar in New York City around the beginning of the 2000s.

Accounts credit T. J. Siegal, a friend of Milk & Honey founder Sasha Petraske, with the idea. Siegal asked for honey syrup to replace the ordinary sweetener in his Bourbon Sour, creating the simple three-ingredient combination that became the Gold Rush.

The cocktail spread remarkably quickly through modern cocktail bars and is now commonly treated as a modern classic. It also helped provide the foundation for another famous Milk & Honey creation: Sam Ross's Penicillin, which takes the whiskey, lemon and honey structure in a smoky Scotch-and-ginger direction.

Shake the bourbon, lemon and honey syrup firmly with 150 g ice for around 10–12 seconds.

The cocktail should develop a slight natural cloudiness and a light layer of aeration from shaking, but it should not have the thick white foam associated with an egg-white sour.

Strain it over approximately 100 g fresh ice in an Old Fashioned glass. A large clear cube also works particularly well because it keeps the drink cold while limiting rapid dilution.

Serve the Gold Rush on the rocks in an Old Fashioned glass.

Finish with a fresh lemon twist. Express the peel over the surface first so the citrus oils sit above the drink and contribute aroma with every sip.

The finished cocktail should have a golden-yellow colour with natural light cloudiness, rather than looking clear or heavily foamed.

TIPS & VARIATIONS

Use honey syrup, not straight honey. It incorporates much more easily into a cold cocktail.

Adjust for your honey syrup. Different honey varieties and syrup concentrations can vary noticeably in sweetness, so small adjustments may be needed. 

Keep the lemon fresh. With only three liquid ingredients, poor citrus is immediately noticeable.

Try the Bee's Knees. Replace bourbon with gin for the closely related gin, lemon and honey classic.

Move towards a Penicillin. Scotch and a honey-ginger component transform the same basic structure into another modern classic.
