What Is Absinthe?
Absinthe is a high-strength herbal spirit traditionally flavoured with botanicals such as wormwood, anise and fennel. Its powerful aroma and concentrated flavour mean that only a small amount is often needed in cocktails.
Absinthe in Cocktails
Absinthe is frequently used as a rinse or in small measures to add herbal complexity without overpowering the rest of the drink.
- Sazerac — Rye whiskey, cane sugar syrup and Peychaud's bitters served in an Absinthe-rinsed glass.
- Corpse Reviver No. 2 — Gin, orange liqueur, aromatised wine and fresh lemon with a small Absinthe rinse.
- Death in the Afternoon — Absinthe topped with sparkling wine for a simple, intensely aromatic serve.
