  1. Add 50 ml dry gin, 25 ml fresh lemon juice and 12 ml cane sugar syrup to a cocktail shaker.
  2. Add approximately 150 g of ice and shake firmly for 10–12 seconds until thoroughly chilled.
  3. Fill a rocks glass with approximately 200 g crushed ice, mounding it slightly above the rim.
  4. Strain the gin mixture over the crushed ice.
  5. Slowly drizzle 15 ml blackberry liqueur over the surface in a circular motion, allowing it to trickle naturally through the ice.
  6. Garnish with two fresh blackberries and a lemon slice. Serve immediately without stirring.

WHAT MAKES A GOOD BRAMBLE?

A great Bramble balances dry botanical gin, fresh lemon acidity and rich blackberry flavour without becoming overly sweet. Gin provides the foundation, lemon keeps the cocktail bright and refreshing, and a small amount of sugar syrup softens the citrus.

The defining ingredient is blackberry liqueur, which is drizzled over the finished cocktail rather than shaken with the other ingredients. This creates the Bramble's distinctive berry-coloured streaks and allows the blackberry flavour to develop gradually as the drink is enjoyed.

Crushed ice is essential for the classic presentation. It keeps the drink thoroughly chilled and provides gradual dilution, bringing the gin, lemon and blackberry together into a refreshing, balanced cocktail.

BRAMBLE: RECIPE, INGREDIENTS & TIPS

The Bramble is a modern British gin cocktail that combines the freshness of a Gin Sour with the rich fruit character of blackberry liqueur. Created in London during the 1980s, it has become a recognised modern classic. This guide explains how to choose the best gin and blackberry liqueur, balance fresh lemon with sugar syrup, and create the signature blackberry drizzle over crushed ice. You'll also learn why the final ingredient is added after shaking rather than mixed into the cocktail.

INGREDIENT GUIDE

THE BEST INGREDIENTS FOR A BRAMBLE

A classic Bramble starts with a London Dry Gin that has a clear juniper character and fresh citrus notes. A dry, botanical gin provides the structure needed to balance the lemon and sweet blackberry liqueur without disappearing behind the fruit flavours.

For the blackberry component, we recommend BVL and Blackberry Liqueur 18% Vol. Its rich berry character, sweetness and deep colour make it a suitable choice for the Bramble's signature drizzle. Traditional recipes use crème de mûre, a French-style blackberry liqueur, but a good-quality blackberry liqueur can also work well.

Freshly squeezed lemon juice provides the clean acidity that keeps the cocktail refreshing. A small amount of cane sugar syrup softens the citrus without making the drink unnecessarily sweet.

Finish with two fresh blackberries and a lemon slice. These simple garnishes reinforce the cocktail's fruit aromas and complement its distinctive presentation over crushed ice.

HOW TO BALANCE A BRAMBLE

A balanced Bramble should taste fresh and citrusy, with the blackberry liqueur adding fruit and sweetness without overpowering the gin. Our recipe combines 50 ml dry gin, 25 ml fresh lemon juice, 12 ml cane sugar syrup and 15 ml blackberry liqueur.

Because blackberry liqueur already contains sugar, the additional syrup should be used sparingly. If the cocktail tastes too sour, increase the sugar syrup slightly. If it is too sweet, reduce the syrup or use a little more fresh lemon juice.

The blackberry liqueur is added last, so its flavour becomes more integrated as the crushed ice melts. The finished drink should retain a noticeable gin character, bright citrus freshness and a balanced blackberry finish.

Origins

THE STORY BEHIND THE BRAMBLE

The Bramble was created in London during the 1980s by British bartender Dick Bradsell, one of the most influential figures in modern cocktail culture. He developed the drink while working at Fred's Club in Soho.

Bradsell wanted to create a cocktail with a distinctly British character and drew inspiration from childhood memories of picking wild blackberries on the Isle of Wight. The blackberry liqueur reminded him of those flavours and became the defining ingredient.

By combining gin, fresh lemon juice, sugar syrup and blackberry liqueur over crushed ice, Bradsell created a refreshing cocktail with a distinctive berry-coloured appearance.

The Bramble went on to become an internationally recognised modern classic and remains one of the best-known examples of the British cocktail revival.

HOW TO MAKE IT

HOW TO CREATE THE BRAMBLE'S BLACKBERRY DRIZZLE

The Bramble gets its signature appearance from the way blackberry liqueur is added after the gin mixture has been shaken and strained.

Fill a rocks glass generously with crushed ice and pour the chilled gin, lemon and sugar mixture over it. Then slowly drizzle 15 ml blackberry liqueur across the surface in a circular motion.

As the dark liqueur travels through the crushed ice, it creates distinctive red and purple streaks throughout the drink. This gives the Bramble its attractive layered appearance and allows the berry flavour to develop gradually.

Avoid stirring immediately after adding the liqueur. Let it mix naturally with the gin and citrus as the cocktail is enjoyed.

HOW TO SERVE A BRAMBLE

Serve a Bramble in an Old Fashioned or rocks glass filled generously with crushed ice. Mound the ice slightly above the rim to create the traditional presentation.

After pouring the chilled gin mixture over the ice, slowly drizzle the blackberry liqueur across the surface. The dark berry colour should trickle through the ice, creating attractive streaks against the pale citrus cocktail.

Garnish with two fresh blackberries and a lemon slice. Serve immediately while the crushed ice is cold and firm, allowing the flavours to develop gradually as the drink is enjoyed.

Questions about the Bramble

What is a Bramble cocktail made from?

A classic Bramble contains gin, fresh lemon juice, sugar syrup and blackberry liqueur.

Is blackberry liqueur the same as crème de mûre?

Crème de mûre is the French term commonly used for a sweet blackberry liqueur. For Drinkero, we use the simpler ingredient name Blackberry Liqueur.

Can I use crème de cassis instead?

You can, but it changes the cocktail. Crème de cassis is made from blackcurrants rather than blackberries, so the flavour is noticeably different.

Why does a Bramble use crushed ice?

Crushed ice rapidly chills the cocktail and provides gradual dilution, helping soften the lemon and integrate the blackberry liqueur.

Can I make a Bramble without crushed ice?

Yes, but the texture and presentation will be different. The classic version is best served over crushed ice.

Which gin is best for a Bramble?

A traditional London Dry Gin works particularly well because its juniper and citrus character remains noticeable alongside blackberry and lemon.

Is the Bramble an official IBA cocktail?

Yes. The Bramble is included in the International Bartenders Association’s official cocktail list as a New Era cocktail. See the IBA’s official Bramble recipe for the classic specification.
