  1. Add 50 ml bourbon, 25 ml fresh lemon juice, 20 ml cane sugar syrup and 3 dashes of Fee Brothers Fee Foam to a cocktail shaker. Add 2 dashes of aromatic bitters if desired.
  2. Shake vigorously without ice for approximately 10 seconds to begin creating the foam.
  3. Add 150 g of ice and shake firmly for another 10–12 seconds until thoroughly chilled.
  4. Double strain into a chilled coupe glass for a straight-up Whiskey Sour, or into a rocks glass containing approximately 100 g of fresh ice.
  5. Express a fresh lemon twist over the cocktail and use it as the garnish. Serve immediately.

WHAT MAKES A GOOD WHISKEY SOUR?

A great Whiskey Sour balances the warmth and richness of bourbon with fresh lemon acidity and just enough sugar syrup to soften the citrus. The whiskey should remain at the centre of the cocktail, supported by a refreshing sweet-and-sour finish.

Fresh lemon juice is essential for a clean, bright flavour, while proper shaking chills and dilutes the ingredients for a smoother result. Fee Brothers Fee Foam adds a light, silky layer without using egg white. The finished cocktail should be refreshing and well balanced, with a creamy foam that complements rather than overwhelms the whiskey.

WHISKEY SOUR: RECIPE, INGREDIENTS & TIPS

The Whiskey Sour is one of the most recognisable classic whiskey cocktails, built around a simple combination of bourbon, fresh lemon juice and sugar syrup. Its appeal comes from balancing the whiskey's richness with bright citrus and gentle sweetness. This guide explains how to choose the right bourbon, adjust the sweet-and-sour balance and create a smooth, stable foam using Fee Brothers Fee Foam. You'll also learn how to dry shake the cocktail and serve it either straight up or over ice.

Origins

THE STORY OF THE WHISKEY SOUR

The Whiskey Sour belongs to the classic sour family of cocktails, built around the simple combination of a spirit, citrus juice and a sweetening ingredient. Whiskey-based sours became popular during the nineteenth century as bartenders developed this versatile formula.

Early Whiskey Sour recipes relied on whiskey, fresh lemon and sugar, often served without the foamy topping associated with many modern versions. Over time, the addition of a foaming ingredient became a popular variation, creating a smoother texture and distinctive presentation.

Today, the Whiskey Sour remains a classic cocktail enjoyed with bourbon or rye whiskey. Its straightforward combination of rich whiskey, bright citrus and balanced sweetness has also inspired variations such as the New York Sour, which adds a red wine float.

INGREDIENT GUIDE

THE BEST INGREDIENTS FOR A WHISKEY SOUR

A balanced bourbon whiskey is the ideal foundation for a classic Whiskey Sour. Look for a bourbon with enough vanilla, caramel and oak character to remain noticeable alongside the fresh lemon. Bourbon creates a rounded, slightly sweet cocktail, while rye whiskey offers a spicier, drier alternative.

Use freshly squeezed lemon juice for bright acidity and a clean citrus finish. Fresh lemon is particularly important in a Whiskey Sour because the citrus plays such a prominent role in the flavour.

A good cane sugar syrup provides consistent sweetness and blends easily with the other ingredients. It allows you to adjust the cocktail's balance without introducing unwanted flavours.

For a silky foam without egg white, use Fee Brothers Fee Foam. Three dashes in the shaker help create a smooth, aerated head when the cocktail is dry shaken and then shaken again with ice.

Aromatic bitters are optional, but two dashes can add extra spice and complexity. They can be shaken with the other ingredients or used sparingly as a finishing accent on the foam.

HOW TO MAKE IT

HOW TO BALANCE A WHISKEY SOUR

The key to a well-balanced Whiskey Sour is finding the right relationship between bourbon, fresh lemon and sugar syrup. Our recipe uses 50 ml bourbon, 25 ml lemon juice and 20 ml cane sugar syrup, creating a bright, refreshing cocktail that still retains the whiskey's rich character.

If your Whiskey Sour tastes too sour, add a little more sugar syrup. If it is too sweet, increase the lemon juice slightly. The sweetness of the syrup and the acidity of fresh lemons can vary, so small adjustments may be necessary.

Proper dilution matters too. Shake firmly with ice until thoroughly chilled, but avoid excessive shaking that makes the cocktail watery. A good Whiskey Sour should taste smooth and balanced, with the bourbon, citrus and sweetness working together rather than competing.

HOW TO CREATE SILKY WHISKEY SOUR FOAM

A smooth foam gives the Whiskey Sour its distinctive silky texture and elegant appearance. For an egg-free version, add 3 dashes of Fee Brothers Fee Foam to the shaker along with the bourbon, fresh lemon juice and sugar syrup.

Start with a dry shake, shaking vigorously without ice for approximately 10 seconds. This begins aerating the mixture and helps incorporate the foaming ingredient.

Next, add 150 g of ice and shake firmly for another 10–12 seconds to chill and dilute the cocktail. Double strain into a chilled coupe or rocks glass, allowing the foam to settle into an even layer across the surface.

For the best presentation, serve immediately while the foam is fresh and stable. The cocktail should have a light, creamy head rather than a thick, stiff foam.

HOW TO SERVE A WHISKY SOUR

A Whiskey Sour can be served straight up in a chilled coupe glass or over fresh ice in an Old Fashioned glass. Both presentations are traditional and work well with a silky foamed Whiskey Sour.

For an elegant presentation like the one shown in this recipe, double strain the cocktail into a chilled coupe without ice. This allows the smooth, creamy foam to form an even layer across the surface.

For a longer-lasting, colder drink, serve it in a rocks glass over approximately 100 g of fresh ice. Large ice cubes work particularly well because they melt more slowly and help control dilution.

Finish with a fresh lemon twist. Gently express the citrus oils over the surface before placing the twist on the rim of the glass. Serve immediately while the cocktail is thoroughly chilled and the foam is at its best.

Questions about the Whiskey Sour

What whiskey is best for a Whiskey Sour?

Bourbon works particularly well because its rich vanilla, caramel and oak character balances the acidity of lemon. For Drinkero's recipe, we recommend Wild Turkey 101 Bourbon.

Can I use rye whiskey instead of bourbon?

Yes. Rye creates a drier, spicier Whisky Sour with more peppery character.

How much Fee Brothers Fee Foam should I use?

For the Drinkero Whisky Sour, use 3 dashes per cocktail.

Do you need to dry shake a Whiskey Sour?

Not strictly, but it helps. With Fee Brothers Fee Foam, a short dry shake before adding ice helps build a smoother, more even foam. Then add ice and shake again until the drink is thoroughly chilled.

Should a Whiskey Sour be served with ice?

It can be served either up or over ice. Drinkero's version is served in a rocks glass over fresh ice.

Can I make Whiskey Sours for a group?

Yes. Choose 6, 12, 24 or 48 cocktails in the Drinkero builder and it calculates the bourbon, lemon juice, syrup and other components you need.

Is the Whiskey Sour an official IBA cocktail?

Yes. The Whiskey Sour is an official International Bartenders Association cocktail in the New Era Drinks category. The IBA recipe uses 45 ml bourbon, 25 ml fresh lemon juice and 20 ml sugar syrup, with egg white optional. Drinkero's version uses 50 ml bourbon and replaces egg white with Fee Brothers Fee Foam for a silky finish. See the official IBA Whiskey Sour recipe
