Zombie

The Zombie is one of the great tiki cocktails: powerful, tropical and layered with rum, citrus, spice and a touch of herbal complexity. Traditional versions often use several rums, including overproof rum. This Drinkero version is designed for home bartenders and uses two regular-strength rums instead, keeping the drink rich and complex without requiring another specialist bottle.

WHAT MAKES A GOOD ZOMBIE?

A good Zombie should taste powerful, but it should not simply taste of alcohol.

The drink works because several strong flavours are layered together. The aged rum brings depth and warmth, dark rum adds richer molasses notes, fresh lime provides sharp acidity, pink grapefruit adds bitter citrus, falernum contributes spice and clove, while cinnamon, grenadine, bitters and absinthe add complexity in smaller amounts.

The best Zombie has enough fruit and spice to be exciting, but the rum should remain clearly noticeable.

ZOMBIE: RECIPE, INGREDIENTS & TIPS

The Zombie is not a simple rum-and-juice drink. Its character comes from layering several flavours in small, controlled amounts. Lime and grapefruit provide freshness, falernum and cinnamon bring spice, while bitters and absinthe add complexity. Because there are many ingredients, balance matters more than adding even more flavour. If your cinnamon syrup is especially sweet, reduce the grenadine slightly. If your grapefruit juice is very tart, you may want a little more syrup. The goal is to keep the drink powerful but still refreshing.

INGREDIENT GUIDE

THE BEST INGREDIENTS FOR A ZOMBIE

Gold rum

Gold rum provides the main structure of the drink.

For Drinkero, use Ron Santiago de Cuba Añejo 8 Años. It gives the Zombie a smooth aged-rum base with oak, vanilla and mature rum character.

Dark rum

The dark rum should add more aromatic depth and tiki character.

For Drinkero, use Planteray Original Dark Barbados & Jamaica. Its blend of Barbados and Jamaican rum gives the cocktail extra fruit, spice and richness without making it overly heavy.

Pink grapefruit juice

Pink grapefruit gives the Zombie fresh citrus with softer bitterness than white grapefruit.

It works especially well alongside lime, cinnamon and the more aromatic dark rum.

Fresh lime juice

Fresh lime is essential. It provides the main acidic backbone of the drink and keeps the sweeter ingredients from becoming heavy.

Velvet Falernum

Falernum is one of the ingredients that gives the Zombie its recognizable tiki character.

John D. Taylor’s Velvet Falernum combines lime, clove and spice and works particularly well with both gold and dark rum.

Cinnamon syrup

Cinnamon syrup adds warm spice and controlled sweetness.

Around 10 ml is enough to make the cinnamon noticeable without overpowering the citrus and rum.

Grenadine

Use grenadine sparingly.

Five millilitres adds a little fruit sweetness and colour while allowing the rum, grapefruit and spice to stay dominant.

Absinthe

The absinthe should remain firmly in the background.

Three or four drops are enough to add anise and herbal complexity without turning the cocktail into an absinthe drink.

HOW TO BALANCE A ZOMBIE

If the drink tastes too sweet, add another 5 ml of fresh lime juice.

If the cinnamon is too strong, reduce the cinnamon syrup to 5–7.5 ml.

If the grapefruit dominates, reduce it to 10 ml.

If the drink feels too strong, allow a little more dilution from the crushed ice before drinking.

A good Zombie should move between rum, citrus and spice without any one ingredient taking over.

Origins

THE STORY BEHIND THE ZOMBIE

The Zombie was created by Donn Beach, one of the pioneers of tiki cocktail culture, in California during the 1930s.

The original drink became famous for combining several styles of rum with citrus, falernum, cinnamon and other carefully measured ingredients.

Many variations appeared over the years because the original recipes were closely guarded and frequently changed.

That is why modern Zombie recipes can differ significantly from one bar to another.

HOW TO MAKE IT

THE RIGHT ZOMBIE RATIO

A useful structure for this version is:

75 ml total rum
35 ml fresh citrus
25 ml sweet and spiced ingredients
Bitters and absinthe in very small quantities

This keeps the cocktail strong but balanced.

If you want a lighter Zombie, reduce the gold rum from 45 ml to 30 ml.

If you want more rum intensity, slightly increase the gold rum rather than adding more dark rum.

HOW TO SERVE A ZOMBIE

Serve the Zombie in a Tiki glass or tall tumbler packed with crushed ice.

A large mint bouquet is the ideal garnish because it adds fresh aroma every time you bring the glass toward your nose.

Gently slap the mint between your hands before garnishing to release its aroma.

A straw is useful because the drink is served over crushed ice.

Questions about the Zombie

What alcohol is in a Zombie?

The Zombie is primarily a rum cocktail. Traditional versions use several rum styles, while this Drinkero version uses gold rum and dark rum.

Can you make a Zombie without overproof rum?

Yes. This version uses gold and dark rum instead. It is slightly less aggressive than an overproof Zombie but still rich, complex and rum-forward.

What is gold rum?

Gold rum is usually aged and develops a golden or amber colour together with smoother notes of oak, vanilla, caramel and spice.

Why use both gold and dark rum?

Gold rum provides smoothness and structure, while dark rum adds richer fruit, molasses and spice. Together they create more depth than using only one style.

Does a Zombie contain pineapple juice?

Not necessarily. Some modern versions include pineapple juice, but lime, grapefruit, falernum and cinnamon are more central to the classic Zombie flavour profile.

What is falernum?

Falernum is a Caribbean-style sweetened ingredient flavoured with lime and spices, especially clove. It is widely used in tiki cocktails.
