WHAT MAKES A GOOD CAIPIRINHA?
A good Caipirinha is all about the balance between cachaça, fresh lime and sugar. The lime should provide bright acidity and aromatic citrus oils, while the sugar softens its sharpness without making the drink overly sweet.
The cachaça should remain clearly present, bringing its distinctive fresh sugarcane character. Gentle muddling is important: you want to release the lime's juice and aromatic oils without aggressively crushing the peel and extracting excessive bitterness.

CAIPIRINHA: RECIPE, INGREDIENTS & TIPS
A practical guide to making a classic Caipirinha, from choosing the right cachaça and preparing the lime to balancing sweetness and mixing the drink properly.
THE BEST INGREDIENTS FOR A CAIPIRINHA
Cachaça is the defining ingredient of a Caipirinha. Unlike rum made primarily from molasses, cachaça is produced from fermented fresh sugarcane juice, giving it its distinctive fresh, grassy and fruity character.
For Drinkero's Caipirinha, we recommend Leblon Cachaça Fina de Alambique or Cachaça 51 Brazil Sugar Cane Spirit. Its fresh sugarcane character, subtle fruitiness and smooth profile work particularly well with lime and sugar.
Fresh lime is essential. Because the lime pieces are muddled directly in the serving glass and remain in the finished cocktail, both the juice and aromatic oils from the peel contribute to the drink.
Fine sugar works particularly well because it begins dissolving as the lime is muddled. It also gives the classic Caipirinha a slightly more textured character than using sugar syrup.
HOW TO BALANCE A CAIPIRINHA
The Caipirinha contains only three main ingredients, so small changes have a noticeable effect.
Our recipe uses 60 ml cachaça, ½ fresh lime and 10 g fine sugar. This gives the cocktail plenty of fresh lime character while keeping enough sweetness to balance its acidity.
If your lime is particularly tart, you can slightly increase the sugar. If it is naturally sweet and juicy, slightly less may be enough.
The goal is a refreshing cocktail where the cachaça remains clearly identifiable, rather than a sweet lime drink.
THE STORY BEHIND THE CAIPIRINHA
The Caipirinha is Brazil's most famous cocktail and is inseparably connected with cachaça, the country's distinctive sugarcane spirit.
Its precise origins are uncertain, with several stories surrounding the development of the combination of cachaça, lime and sugar. Over time, the simple mixture became established as one of Brazil's defining drinks.
Its simplicity is a major part of its identity. Unlike many tropical cocktails, the classic Caipirinha requires no liqueurs, juices or mixers — just cachaça, fresh lime, sugar and ice.
Today it is recognised around the world as the signature cocktail of cachaça and one of the great three-ingredient classics.
TECHNIQUE: MUDDLE, BUILD & STIR
The Caipirinha is prepared directly in the glass rather than in a cocktail shaker.
Place the lime wedges and sugar in a rocks glass and muddle gently. Press firmly enough to release the lime juice and some of the aromatic oils from the peel, but avoid pulverising the lime.
Add the cachaça, fill the glass generously with crushed or small ice and stir thoroughly. This distributes the lime and partially dissolved sugar throughout the cocktail while providing the necessary chilling and dilution.
The muddled lime pieces remain in the glass when the cocktail is served.
HOW TO SERVE A CAIPIRINHA
Serve the Caipirinha in a rocks glass with plenty of crushed or small ice.
Leave the muddled lime pieces in the drink. They are part of the classic presentation and continue to contribute fresh citrus aroma as the cocktail is enjoyed.
Finish with a simple fresh lime wedge. No additional herbs or elaborate garnish are necessary.
Serve immediately while the drink is cold and the lime is at its freshest.
Questions about the Caipirinha
What is a Caipirinha made with?
A classic Caipirinha contains just three main ingredients: cachaça, fresh lime and sugar, served with plenty of ice.
What is the best cachaça for a Caipirinha?
A fresh, characterful cachaça works particularly well. Drinkero recommends Leblon Cachaça Fina de Alambique for its fresh sugarcane character and balanced profile.
Is cachaça the same as rum?
No. Both are sugarcane spirits, but cachaça is a distinct Brazilian spirit traditionally made from fermented fresh sugarcane juice. Its flavour is generally fresher and grassier than many molasses-based rums.
Should you muddle the lime in a Caipirinha?
Yes. The lime is traditionally muddled with sugar directly in the serving glass. Muddle gently rather than crushing the peel excessively, which can introduce too much bitterness.
Does a Caipirinha contain soda water?
No. A classic Caipirinha contains cachaça, lime and sugar. Soda water is not required.
Can I make Caipirinhas for a group?
Yes. Choose whether you're making 6, 12, 24 or 48 Caipirinhas and Drinkero calculates the cachaça and quantities you need, while showing the fresh lime and other ingredients you'll need separately.
Is the Caipirinha an official IBA cocktail?
Yes. The Caipirinha is included in the International Bartenders Association’s official cocktail list as a Contemporary Classic. See the IBA’s official Caipirinha recipe for the classic specification.
