Method

Make it properly

  1. Add elderflower aperitivo and fresh mint to a large wine glass.
  2. Fill the glass generously with ice and add the sparkling wine.
  3. Top with soda water and stir gently to combine without losing the bubbles.
  4. Add the lime slices and finish with fresh mint.

THE STORY OF THE HUGO SPRITZ

The Hugo Spritz originated in South Tyrol in northern Italy in the early 2000s. It was created as a lighter, more floral alternative to the traditional bittersweet Spritz.

The drink became particularly popular across northern Italy, Austria and Germany, where its combination of sparkling wine, elderflower, mint and citrus developed into a modern aperitivo favourite.

A good Hugo Spritz starts with a fresh sparkling wine that provides plenty of bubbles without overpowering the delicate elderflower character. Elderflower aperitivo brings floral sweetness, while soda water keeps the cocktail light and refreshing.

TECHNIQUE: BUILD, TOP & STIR

The Hugo Spritz is built directly in a large wine glass. Add the elderflower aperitivo and mint, then fill the glass generously with ice before adding chilled sparkling wine and soda water.

Stir gently rather than vigorously. This combines the ingredients while preserving the carbonation that gives the Spritz its light, refreshing texture.

Add the lime slices and finish with fresh mint. Avoid crushing the mint heavily; gently handling it releases its aroma without introducing excessive herbal bitterness.
