Method

Make it properly

  1. Chill a highball glass before preparing the cocktail.
  2. Add the gin, fresh lemon juice and cane sugar syrup to a shaker with 150 g ice. Shake firmly for around 10–12 seconds.
  3. Strain into the chilled highball glass. Do not add ice to the serving glass.
  4. Pour in 80 ml chilled soda water gently to preserve the carbonation.
  5. Garnish with a lemon slice if desired and serve immediately.

WHAT MAKES A GOOD GIN FIZZ?

A Gin Fizz is essentially a shaken gin sour finished with soda water. The shaking incorporates air and properly combines the lemon and syrup before carbonation is introduced.

Unlike a Ramos Gin Fizz, the classic Gin Fizz contains no cream or egg white and should not have a thick, stable foam cap. A little temporary froth after pouring is completely normal.

The Gin Fizz is built around one of the simplest combinations in cocktail making: spirit, citrus, sugar and carbonation. What distinguishes it from a Collins-style drink is the technique. The gin, lemon and sugar are shaken first, giving the cocktail a slightly aerated texture before soda water is added. It should be refreshing rather than sweet, with enough lemon to remain lively and enough sugar to soften the acidity without hiding the gin.

THE BEST INGREDIENTS FOR A GIN FIZZ

A classic London Dry Gin works particularly well because its juniper and citrus botanicals remain noticeable after lemon and soda are added. Very delicate gins can become lost once the cocktail is lengthened.

Use fresh lemon juice rather than bottled juice whenever possible. With so few ingredients, the quality and acidity of the citrus have a major influence on the finished drink.

Cane sugar syrup provides sweetness without leaving undissolved sugar in the glass. The final ingredient should be well-chilled, neutral soda water with plenty of carbonation.

HOW TO BALANCE A GIN FIZZ

The balance starts with 45 ml gin against 30 ml fresh lemon juice. This produces a distinctly citrus-forward drink, while 10 ml sugar syrup takes away the sharpest edge without turning it sweet.

Soda water then opens the cocktail and reduces its intensity. Keep the soda cold and add it only after shaking. Too much soda can make the drink thin; too little makes it drink more like a standard Gin Sour.

The Gin Fizz belongs to the historic Fizz family of cocktails: spirit, citrus and sugar shaken together and finished with carbonated water. The style became established in American cocktail culture during the late 19th century.

Over time, numerous variations appeared, including the Silver Fizz, Golden Fizz and the considerably more elaborate Ramos Gin Fizz. The straightforward Gin Fizz remains the clearest expression of the original formula.

Shake the gin, lemon and syrup without the soda water. Carbonated ingredients should never be vigorously shaken in a sealed cocktail shaker.

After straining, gently add cold soda water. There is no need for aggressive stirring—a light integration preserves more carbonation.

Unlike many modern highball cocktails, the current IBA Gin Fizz specification is served without ice.

Serve immediately in a chilled highball glass without ice. The drink should arrive cold, lively and freshly carbonated.

A lemon slice is the classic garnish listed by the IBA, although keeping the presentation completely ungarnished also gives it a particularly clean appearance.

TIPS & VARIATIONS

Keep everything cold. The cocktail is served without ice, so a chilled glass, properly shaken base and cold soda make a noticeable difference.

Don't chase a large foam head. A classic Gin Fizz may develop some light froth, but the tall creamy foam associated with a Ramos Gin Fizz is not the goal.

Adjust the soda last. If you prefer a more concentrated drink, use slightly less soda. For a lighter long drink, increase it modestly.
